Chicken and Dumplings

Dinner tonight is homemade Chicken & Dumplings.  So tasty on a cold winter day! First, boil a whole chicken.  Fill pot with water so it is just covering the chicken.  Throw in some celery, a few baby carrots, parsley, and salt & pepper.  Bring to a boil over medium-high heat.  Once boiling, turn down the heat to a slow boil.  Cook for about 45 minutes - until meat and skin is falling from the bone, meat will be very tender.  Save the stock water and run it through a cheesecloth to strain out the clear broth...you will use the broth as your soup base. Pizza!

We just discovered Udi's GF pizza crust and we love it!  We had tried a GF cheese pizza from a local pizzeria in our town, but it didn't agree with Tootsie.  The first time we ordered, we asked for very light sauce, but that didn't agree with Tootsie.  We tried it again with no sauce and it still gave her a tummy ache so we decided pizza wasn't an option for her.  Until we found this crust that is!  Then it was the question, "What do we put on it?"  I read on a Facebook group that some kiddos do okay with plain tomato paste.  I was a little nervous to try it since everything else I've read said it is high in fructose and should be avoided...but we gave it a go.  I used a spatula to spread the tomato paste very thin across the crust.  Just enough to give it some color - then topped it with monterey jack cheese.  Tootsie LOVED it and wanted to eat the whole thing.  I let her eat half.  Didn't want to overdo it.  She had the second half the following d

New Facebook Group For Parents

I started a new Facebook group specifically for parents of FructMal kids.  There are a couple other groups  out there that are really great for adults, but I have noticed there are more and more kiddos being diagnosed and it would be wonderful if we could have a place to talk openly about kid stuff.  I just started the group tonight so it may take a little while to get things rolling, but I'd love for you to join & share your experience! GF, Fructose Friendly Cupcakes

Today is Tootsie's birthday party!  She is turning 6 in a few days.  I was a little worried about what we would serve for a birthday cake so I jumped online an searched for GF Cupcakes.  I found the recipe below, but it called for 1-1/4 C sugar...too much for my girl.  I altered the recipe by decreasing the sugar to 1/2 C and added 1/8 C dextrose.  The cupcakes turned out great and were plenty sweet.  I did the math and 1 cupcake has 6.25g of sugar...I used 16 tin baking cups. 12 standard size cupcakes would be 8.33g of sugar per cupcake.   Too much for Tootsie at one sitting...she would only be able to tolerate a half. GF FF CUPCAKES 1-1/2 C rice flour 3/4 tapioca flour 1 tsp salt 1 tsp baking soda 3 tsp baking powder 1 tsp xanthan gum 4 eggs 1/2 cup sugar 1/8 cup dextrose 2/3 cup mayo 1 cup milk 2 tsp vanilla FROSTING Betty Crocker whipped Butter Cream (sweetened with sugar &  High Maltose Corn Syrup - safe for FM in moderation).  We used a very light sp

New Food Finds!

We get so excited when we find prepared foods that are FructMal friendly.  My son and I were doing hi-fives in the isle...and Tootsie was all smiles.  This is what we found: Two cereals - Peanut Butter Panda Puffs & Gorilla Munch .  The sugar content is pretty high for Tootsie so we'll have to try small amounts and limit it to a couple times a week to see how she does.   Udi's Snickerdoodle Cookies - again, high in sugar so we broke one in half and she said it tasted like Heaven! ...and Udi's Pizza Crusts We ended up making the pizza for dinner tonight.  We used a VERY thin spread of tomato paste and topped with monterey jack cheese.  She loved it!  Now we'll have to wait a couple days to see if she shows any symptoms.  I hope not!  We love ordering pizzas and having movie night a couple times a month - this would allow her to fully join in and not feel too different.

Tootsie is a Gymnast

Tiny Toots is moving up from  Hot Shots to Level 1-2 Gymnastics.  She is quite serious about this new found sport.  She can't wait to learn how to do a back flip!  She practices her jump roping, her bridge, and her cartwheel skills every night...and asks, "Mom, how many more days until gymnastics?"
